1. Season chicken thighs with Creole seasoning, onion powder, garlic powder, Sazón seasoning, smoked paprika, and black pepper. 2. In a large pot or Dutch oven, heat vegetable oil over medium heat. Add seasoned chicken and cook until browned on all sides. Remove and set aside. 3. Add sausage slices and turkey drums to the pot. Brown slightly, then remove and set aside. 4. In the same pot, add diced yellow onion, green bell pepper, red bell pepper, celery, and minced garlic. Sauté until softened. 5. Stir in flour to make a roux, cooking until it turns a deep caramel color. 6. Gradually whisk in the broth until smooth. Bring to a simmer. 7. Return the chicken, sausage, and turkey to the pot. Add collard greens and stir to combine. 8. Season the gumbo with Creole seasoning, Sazón seasoning, onion powder, garlic powder, Adobo seasoning, red chili flakes, and gumbo filé. 9. Simmer the gumbo on low heat for 1.5 to 2 hours, stirring occasionally, until the meat is tender and the flavors meld together. 10. Stir in vinegar just before serving. Adjust seasoning as needed. 11. Serve hot, garnish with sliced green onions.
