Add the seasoned chicken thighs to the pot. 4. Cook for 30 to 35 minutes, turning occasionally until fully cooked and tender. 5. Halfway through the cooking time, add the birria bomb, Mexican peppers, and garlic to the pot. 6. Continue to cook, allowing the flavors to meld together. 7. Serve the cooked chicken on yellow corn tortillas topped with mozzarella cheese, diced red onion, and sliced Jalapeño.
