1: Prep the pineapple and cucumber salsa first by dicing or chopping all the produce mentioned under the ingredient list. 2: Squeeze in lemon or lime juice and season with salt and pepper. Chill until it’s ready to serve. 3: Add the jerk sauce, seasoning mix and oil to the cleaned chicken thighs.
