1: Slice the chicken thighs and in a bowl, combine chicken, oil, all the spices listed, jerk sauce and marinate while prepping the veggies. 2: Thinly slice the orange bell pepper, green bell pepper, yellow bell pepper and half of a yellow onion. 3: In a medium-hot skillet, sear the chicken for 6 to 7 minutes or until cooked through. 4: On medium heat, sauté the bell peppers and onions until the bell peppers are slightly softened and the onions are caramelized. 5: Add the jerk chicken back into the skillet and mix. Sprinkle the cheese on top, cover and melt.
