A luscious and flavorful dish featuring tender chicken thighs smothered in a creamy sauce made with sun-dried tomatoes, spinach, garlic, cream of chicken soup, and coconut milk. Perfect for a comforting dinner.

1. Add the cleaned boneless-chicken thighs into a bowl. Drizzle olive oil and season with the seasonings listed. Mix very well until the seasoning is fully coated onto the chicken. 2. On medium heat, in a pan sear the chicken on both sides for 2 to 3 minutes. 3. Remove the chicken from the pan and add the sun-dried tomatoes, spinach, and sauté until the spinach is slightly wilted. 4. Next, sauté the garlic into the mixed sun-dried tomatoes and spinach. Sauté until fragrant, about 30 seconds. 5. Whisk in the canned cream of chicken, heavy cream, and coconut milk. 6. Bring the sauce up to a slight simmer and season to taste. 7. Add the chicken thighs back in, cover and simmer for 10-12 minutes. 8. Coat the chicken with the cream sauce and serve while hot.
