Instructions
1: Season the chicken with the seasonings and slice it. 2: In a pot, heat the oil over medium heat. 3: Add the smoked sausage and cook until browned. 4: Add the seasoned chicken thighs and cook until no longer pink. 5: Stir in the onion, green bell pepper, celery, garlic, bay leaves, and thyme. 6: Cook for about 5 minutes until the vegetables are soft. 7: Add the rice, diced tomatoes, chicken broth, Cajun seasoning, dried thyme, paprika, Sazon, onion powder, cumin, garlic powder, oregano, salt and pepper. 8: Bring to a boil, then reduce heat to low and cover. 9: Simmer for about 20-25 minutes until the rice is cooked. 10: If adding shrimp, stir in during the last 10 minutes. 11: Garnish with green onions and parsley before serving.View original recipe
