Instructions
1. Cut the chicken thighs in half and remove the skin from both the thighs and drumsticks. 2. Dice 1/2 yellow onion and 1 green bell pepper. Mince 1-inch of ginger and 4 garlic cloves. 3. Mix the chicken with the diced onion, bell pepper, minced ginger, garlic, Caribbean green seasoning, and thyme sprigs. 4. Add the bay leaves, ketchup, Jamaican browning sauce, allspice, cumin, onion powder, garlic powder, smoked paprika, Sazón seasoning, salt, and pepper to the mixture. Stir well. 5. Pour 3 cups of broth into a large pot and bring to a simmer. 6. Add the seasoned chicken mixture and carrots to the pot. Stir well to combine. 7. Cover the pot and let the stew simmer over medium-low heat for about 45 minutes, or until the chicken is tender. 8. Stir in the butter beans and continue to simmer for an additional 5-10 minutes. 9. Serve the brown stew chicken with rice or dumplings.
