Instructions
1: In a large bowl, combine the cleaned, skinless chicken thighs with coconut oil, sliced bell pepper, sliced onion, 1 tsp browning sauce and 3 tbsp of the seasonings listed above. Mix well and let marinate for at least 1 hour (overnight for deeper flavor). 2: Preheat the oven to 400°F. Spread butter evenly in a heat-safe baking dish. 3: Place the marinated chicken, bell peppers, and onions into the baking dish. Pour 3 cups of chicken broth into the corners of the dish. Bake uncovered for 20 minutes. 4: Remove the chicken from the oven. In a mixing bowl, combine 3 cups of the seasoned broth from the baking dish and 1 cup of water or broth with all-purpose flour, whisking until smooth. Stir in minced garlic, the remaining seasonings, and a dash of browning sauce. 5: Pour the gravy mixture back into the baking dish over the chicken. Bake for an additional 25 minutes. 6: Remove from the oven and let the chicken rest for 5-7 minutes before serving. Enjoy tender, juicy, and flavorful Cajun-smothered chicken!View original recipe
