Creamy Smothered Chicken

What you need

tsp onion powder

cup coconut milk

tbsp olive oil

cup heavy cream

cup fresh spinach

oz cream of chicken soup
tsp adobo seasoning

Instructions
1. Add the cleaned boneless-chicken thighs into a bowl. Drizzle olive oil and season with the seasonings listed. Mix very well until the seasoning is fully coated onto the chicken. 2. On medium heat, in a pan sear the chicken on both sides for 2 to 3 minutes. 3. Remove the chicken from the pan and add the sun-dried tomatoes, spinach, and sauté until the spinach is slightly wilted. 4. Next, sauté the garlic into the mixed sun-dried tomatoes and spinach. Sauté until fragrant, about 30 seconds. 5. Whisk in the canned cream of chicken, heavy cream, and coconut milk. 6. Bring the sauce up to a slight simmer and season to taste. 7. Add the chicken thighs back in, cover and simmer for 10-12 minutes. 8. Coat the chicken with the cream sauce and serve while hot.
